Kraft Macaroni and cheese1 box macaroni and cheese, 1 can of tuna, chicken, or turkey, 1 small can vegetable.  Cook the macaroni drain and add the cheese mix, a can of meat, a can of vegetables, and the seasoning of your choice.  Heat more if needed and eat!  (Serves 4)

Alpine Spaghetti

Ingredients

  • 5 cups Water
  • 8 oz Spaghetti or Other Noodle
  • 1 tbsp Olive Oil
  • 1 cup Parmesan Cheese
  • 3 tsp Ground Sweet Basil
  • 1 tbsp Parsley Flakes
  • 1 Clove Garlic or 1 tsp Garlic Powder

Instructions

Bring water to boil and add spaghetti.  Boil for 10 minutes and drain.  Add olive oil, toss, then add rest of ingredients and toss again until thoroughly mixed.
Serves 2 hungry hikers.

Beef Stroganoff

Ingredients

  • 2 1/2 cups Water
  • 1 1/2 cup Minute Rice
  • 1 packet Dry Tomato Soup Mix
  • 1 lb Beef or 1 pkg Dried Beef
  • 1 can Sliced Mushrooms (Small)
  • 2 tbsp Minced Onions
  • 2 tbsp Oil
  • 1 cup Beef Bouillon
  • 1 tbsp Worcestershire Sauce
  • 1/2 tsp Paprika
  • 1 Packet Dry Sour Cream Mix

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add ingredients, cover and let stand 5 minutes.
Serves 2-3

Chicken Cacciatore

Ingredients

  • 3 cups Water
  • 1 can (4 oz) Chicken
  • 1/4 lb Spaghetti Noodles
  • 1 pkg Soy Sauce
  • 1 pkg Spaghetti Sauce
  • 1 can (6 oz) Tomato Paste
  • 1 tbsp Butter, Margarine, or Oil (Optional)
  • ' 1 pinch Salt
  • 1 pinch Pepper

Instructions

Bring to 2 cups water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Cook spaghetti 10 minutes.  Drain.  Add one cup water and remaining ingredients.  Simmer 5 minutes.  Add salt and pepper to taste.
Serves 2.

Chili Mac

Ingredients

  • 3 cups Water
  • 1 1/2 cups Noodles
  • 1/4 lb Beef
  • 2 tbsp Chili Powder
  • 1 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add noodles and simmer 12-15 minutes.  Drain and add ingredients.  Top with parmesan or cheddar cheese.
Serves 2-3.

Cimarroncito Carbonara (Philmont)

Ingredients

  • 5 cups Water
  • 2 1/4 cups Elbow Macaroni
  • 1 pkg White Sauce Mix
  • 1/4 cup Powdered Milk
  • 1/4 cup Dried Vegetable Mix
  • 1/4 cup Bacon Bits
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add ingredients and simmer for 15 minutes.  Add salt and pepper to taste.  Bacon can also be used as a topping.
Serves 4.

Frontier Dinner Creamettes

Ingredients

  • 4 cups Water
  • 1/2 lb Elbow Macaroni
  • 1 can Tomato Soup
  • 1 can Chili with Beans

Instructions

Bring 3 cups water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add noodles and simmer for 10 minutes.  Drain.  In the same pot blend chili and tomato soup.  Simmer for 2 minutes.
Serves 2.

Ham and Noodles a la Chris

Ingredients

  • 1 1/2 cups Water
  • 1 pkg Lipton Alfredo Noodles Mix
  • 1/4 cup Powdered Milk
  • 1 can (4 oz) Ham (or Chicken)
  • 1 can (8 oz) Corn
  • 1/4 Parmesan Cheese
  • 1 tbsp Butter, Margarine, or Oil (Optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add ingredients and simmer for 20 minutes.
Serves 2.

Koosah Mountain Stew

Ingredients

  • 1 pkg Dry Sour Cream Mix
  • 1/4 cup Instant Dry Milk
  • 1/4 cup Grated Parmesan Cheese
  • 1/4 tsp Paprika
  • 1 large Potato (Unpeeled.  Ramen Noodles can be Substituted to Cut Cooking t=Time)
  • 1 can (4 oz) Turkey Meat
  • 1 pkg (2 Servings) Freeze Dried Green Beans or Fresh Green Beans

Instructions

At home: Place dry sour cream mix, instant dry milk, grated parmesan cheese, and paprika in a 1-quart zipper bag.

In Camp: Bring water to a boil.  Sterilize cookware and utensils in the boiling water. Boil water for another minute.  Dice unpeeled potato and cook with green beans for 10 minutes in 2 1/2 cups boiling water.  While this simmers, add 1/2 cup water to the sour cream bag, seal and knead until well mixed.  In the can, cut the turkey into bite sized pieces.  When the potato and beans are tender, add the sour cream, remaining ingredients, and meat.  Stir well and heat thoroughly.

Paramecium Alfredo

Ingredients

  • 1 1/2 cups Water
  • 1 pkg Lipton Alfredo Noodles Mix
  • 1/4 cup Powdered milk
  • 1 can (4 oz) Chicken
  • 1 cup Dehydrated or Fresh Broccoli (Fresh Ingredients will Increase Cooking Time)
  • 1/4 Parmesan Cheese (Paramecium)
  • 1/2 pkg Alfredo Noodle Mix
  • 1 tbsp Butter, Margarine, or Oil (Optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add ingredients and simmer for 20 minutes.
Serves 2.

Ute Park Pot

Ingredients

  • 5 cups Water
  • 1/2 lb Bacon
  • 1 Onion
  • 2 1/4 cups Elbow Macaroni
  • 3 tsp Salt
  • 2 (12 oz) cans of Whole Tomatoes
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

Dice the bacon and onions and bacon until crisp.  Set aside.  Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add macaroni, and simmer 10 minutes.  Drain.  Add bacon, onions, and whole tomatoes.  Stir, breaking up tomatoes.  Simmer 5 minutes.  Add salt and pepper to taste.
Serves 4.

Clam Chowder

Ingredients

  • 3 cups Water
  • 2 cups Potato Flakes
  • 1 tbsp Onion Flakes
  • 1 tsp Parsley Flakes
  • 1 cup Dried Milk
  • 2 tbsp Bacon Bits
  • 1 can (8 oz) Minced Clams
  • 1 tbsp Butter, Margarine, or Oil (Optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add ingredients and simmer for 10 minutes, but do not boil.
Serves 2 hungry hikers.

Asian Rice and Lentils

Ingredients

  • 2 1/2 cups Water
  • 1/2 cup Brown Rice
  • 1/2 cup Lentils
  • 2 tbsp Butter, Margarine, or Oil
  • 1 Onion (Chopped) or 1 tbsp Onion Flakes
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/2 tsp Cardamom
  • 2 Whole Cloves
  • 1 Bay Leaf
  • 1 pinch Cayenne Pepper (Optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  In a separate pot, melt butter in cook-pot and add all dry ingredients.  Sauté a few minutes and then cover with water.  Cover pot, place over low heat, and cook 45 to 60 minutes.  To reduce cooking time in camp, cracking rice and lentils in loosely set grain grinder at home.  Cracked beans should be about the size of split peas.
Serves 2 hungry hikers.

Instant Refried Beans

Ingredients

  • 2 cups Water
  • 1 1/2 cups Instant Refried Beans
  • 1/4 Shredded Cheese
  • 1 tbsp Butter, Margarine, or Oil (Optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add refried beans and butter.  Simmer for 5 minutes.  Use in Frijoles dip with salsa and Monterey Jack cheese or on nachos, tostadas, or in burrito wraps.
Serves 2 hungry hikers.

Clam Chowder

Ingredients

  • 3 cups Water
  • 2 cups Potato Flakes
  • 1 tbsp Onion Flakes
  • 1 tsp Parsley Flakes
  • 1 cup Dried Milk
  • 2 tbsp Bacon Bits
  • 1 can (8 oz) Minced Clams
  • 1 tbsp Butter, Margarine, or Oil (Optional)

Instructions

Cowboy Steak n' Veggie Soup

Ingredients

  • 1 bag (16 oz) Frozen Mixed Potatoes, Onions and Red Bell Peppers
  • 1 can (8 oz) Green Beans
  • 1 lb Boneless Beef Sirloin Steak (About 1 in Thick)
  • 1 tsp Basil Leaves
  • 2 cups Water
  • 4 Beef Bullions
  • 1/4 tsp Black Pepper
  • 1/2 tsp Salt
  • 1 jar (16 oz) Mild Chunky-Style Salsa
  • 1 tbsp Butter, Margarine, or Oil
  • 2 cloves Garlic or 1 tsp Garlic Powder
  • 1 can (15.5 oz) Kidney Beans, Drained and Rinsed
  • 1 cup Corn
  • Chopped Fresh Basil, Parsley, or Cilantro for Garnish

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Simmer frozen vegetables until vegetables until tender.  Set aside.  Cut beef into 1/4 by 1 inch thick strips.  Place in same pot.  Add oil, garlic, basil, salt and pepper.  Toss to coat.  Cover with lid and cook 15 minutes, or until meat is barely pink.  Add bullions, water, salsa, beans, and cooked vegetables.  Cover and heat on high 10 minutes, or until steaming.  Top with garnish and basil.
Serves 4 hungry hikers.

Corn Chowder

Ingredients

  • 4 1/4 cups Water
  • 1 can Corn (8 oz) or 1/2 cup Dehydrated Corn
  • 1 Potato (Upeeled and cut into Small Pieces or 1/2 cup Freeze-Dried Potato Flakes
  • 2 tbsp Corn Meal
  • 2 tbsp Whole Wheat Flour
  • 2 tbsp Milk Powder
  • 1 tsp Parsley Flakes
  • 1 tsp Onion Flakes
  • 1 tsp Celery Flakes
  • 1/2 tsp Salt
  • 1/8 tsp Paprika
  • 1 dash Pepper
  • 1 tbsp Butter, Margarine, or Oil (Optional)
  • 1 can (4 oz) Shrimp Meat or 1/2 cup Freeze-Dried Shrimp (Optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Combine all ingredients, except crab meat, and stir well.  Bring to boil, stirring occasionally.  Simmer for 10 to 15 minutes.  Add crab meat and its juice, if desired, and heat thoroughly.
Serves 2 hungry hikers.

Lentil Soup

Ingredients

  • 3 cups Water
  • 1/2 cup Lentils
  • 1 tsp Carrot Flakes
  • 1 tsp Minced Onion Flakes
  • 1/2 tsp Salt
  • 1/4 cup Freeze-Dried Potato Flakes
  • 1 tbsp Butter, Margarine, or Oil (Optional)
  • 2 tbsp Parmesan Cheese (Optional)
  • 1 pkg 6-8 Dumplings (Optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add lentil mix in a pot.  Cover and boil for 15 minutes.  Take the pot off the heat and allow to sit for 15 min.  Boil again, simmer for 15 min.  Add potato buds and remaining ingredients and simmer for 5 more minutes.  Add 1 tsp butter or margarine and/or cut parmesan cheese into the soup.  Make dumplings according to directions on the box.
Serves 2 hungry hikers.

Lentil Tomato Soup

Ingredients

  • 5 cup Water
  • 2/3 cup Lentils
  • 1/2 cup Noodles
  • 1/4 cup Tomato Powder
  • 1 tbsp Instant Vegetable Bullion
  • 2 tsp Parsley Flakes
  • 1 tsp Salt
  • 1/4 tsp Garlic Powder
  • 1 dash Pepper
  • 1 tbsp Butter, Margarine, or Oil (Optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Simmer for 45 minutes.
Serves 2 hungry hikers.

Noodlier Chicken Noodle Soup

Ingredients

  • 2 cups Water
  • 1 can (4 oz) Water Chestnuts
  • 1 can (4 oz) chicken
  • 2 pkg Ramen Chicken Flavored Noodles
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add noodles and simmer for 10 minutes.  Add drained water chestnuts and chicken and simmer for 2 minutes.  Add salt and pepper to taste.
Serves 2 hungry hikers.

Polenta Cheese Soup

Ingredients

  • 4 cups Water
  • 1/2 cup Dehydrated Corn
  • 1/4 cup Polenta
  • 1 tbsp Dehydrated Bell Pepper
  • 1 Bay Leaf
  • 1 tsp Parsley Flakes
  • 1 tsp Onion Flakes
  • 1 tsp Celery Flakes
  • 1/2 tsp Salt
  • 1/8 tsp Savory
  • 1 dash Cayenne Pepper
  • 1 tbsp Butter, Margarine, or Oil (Optional)
  • 1/2 cup Powdered Milk
  • 1/4 lb Cheddar Cheese, Grated or Chopped

Instructions

Bring 3 cups of water to boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add all ingredients, except cheese and milk powder.  Simmer for 15 minutes.  Mix milk powder and remaining 1 cup water and combine with polenta when cooked.  Add cheddar cheese.
Serves 2 hungry hikers.

Potato Soup

Ingredients

  • 4 cups Water
  • 1 cup Potato Buds
  • 1/2 cup Dry Milk
  • 2 Beef Bouillon
  • Dried Parsley Flakes (Amount to Taste)
  • Minced Onion Flakes (Amount to Taste)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add ingredients, cover and simmer for 5 minutes.
Serves 2 hungry hikers.

Potato Soup

Ingredients

  • 3 cups Water
  • 1 tbsp Minced Onion Flakes
  • 1 box Betty Crocker Hash Brown Potatoes
  • 1 tsp Dried Bell Peppers
  • 1 tbsp Butter, Margarine, or Oil (Optional)
  • 1 tbsp Bacon Bits
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add ingredients and simmer for 15 minutes or until potatoes are tender Add road kill, but only if fresh Add salt and pepper to taste.
Serves 4 hungry hikers.

Asian Rice and Lentils

Ingredients

  • 2 1/2 cups Water
  • 1/2 cup Brown Rice
  • 1/2 cup Lentils
  • 2 tbsp Butter, Margarine, or Oil
  • 1 Onion (Chopped) or 1 tbsp Minced Onion Flakes
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/2 tsp Ardamom
  • 2 whole Cloves
  • 1 Bay Leaf
  • 1 pinch Cayenne Pepper (optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Melt butter in cook-pot and add all dry ingredients.  Sauté a few minutes and then cover with water.  Cover pot, place over low heat, and cook 45 to 60 minutes.  To reduce cooking time in camp, cracking rice and lentils in loosely set grain grinder at home.  Cracked beans should be about the size of split peas.
Serves 2 hungry hikers.

BBQ Rice and Beans

Ingredients

  • 1 1/2 cups Water
  • 1 cup Minute Rice
  • 1 can (12 oz) Kidney Beans, Drained
  • 2 tbsp Minced Onion Flakes
  • 2 tbsp Dried Green Peppers
  • 1 tbsp Oil
  • 1 Beef Bouillon Cube
  • 1/4 tsp Garlic Powder
  • 1/2 cup Barbecue Sauce

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add ingredients.  Simmer 5 minutes.  Remove from heat and allow rice to absorb remaining liquid.  Fluff and serve.  Add salt and pepper to taste.
Serves 2 hungry hikers.

Brown Rice and Shrimp

Ingredients

  • 5 cups Water
  • 2 cups Brown Rice
  • 1 can (4 oz) Shrimp Meat or 1/2 cup Freeze-Dried Shrimp
  • 1 can (8 oz) can String Beans or 1 cup Freeze-Dried String Beans
  • 1 tbsp Onion Flakes
  • 1/2 tsp Salt
  • 1/8 tsp Oregano
  • 1/8 tsp Thyme
  • 1 tbsp Butter, Margarine, or Oil (Optional)

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Add rice and seasonings.  Simmer for 20-25 minutes.  During the last few minutes add string beans and shrimp.
Serves 2 hungry hikers.

Campbell’s Soup and Rice

Ingredients

  • 1/2 cup Water
  • 1 cup Minute Rice
  • 1 can of Campbell's Chunky Beef Soup

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Stir in rice, cover and let stand for 5 minutes.
Serves 2 hungry hikers.

Cheeseburger Rice

Ingredients

  • 1 1/2 cups Water
  • 1 lb Lean Ground Beef
  • 1 tbsp Minced Onion
  • 1/2 cup Catsup
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 1/2 cups Minute Rice
  • 1 cup Shredded Cheese

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  In a separate pot, brown meat with onions.  Drain grease.  Stir in ingredients.  Bring to boil.  Stir in rice.  Remove from heat and let stand 5 minutes.  Fluff with fork and sprinkle with cheese.  Cover and let stand several minutes to melt cheese.
Serves 4 hungry hikers.

Chicken Fried Rice

Ingredients

  • 1 1/2 cups Water
  • 1 cup Minute Rice
  • 1 tbsp Minced Onion Flakes
  • 2 pkgs Soy Sauce
  • 1/4 cup Diced Carrots and Peas
  • 1 can (4 oz) Chicken

Instructions

Chicken-Flavored Rice Mix

Ingredients

  • 1 cup Long Grain Rice (Cooked)
  • 1 tsp Salt
  • 2 tsp Dried Parsley Flakes
  • 4 tbsp Powdered Chicken Bouillon
  • 2 tsp Dried Tarragon
  • 1/4 tsp White Pepper

Instructions

Combine all ingredients in a large bowl.  Stir until evenly distributed.  Place in an airtight container and store in a cool, dry place.

Chunky Beef Over Rice

  • 1 pkg Success Boil in the Bag Rice
  • 1 can Campbell’s Chunky Beef Soup
  • 2 tbsps Worcestershire Sauce
  • 1 cup Dehydrated or Fresh Broccoli (Fresh Ingredients will Increase Cooking Time)

Instructions

Bring water to boil and cook rice.  When done, set rice aside.  In the same pot combine soup, broccoli and Worcestershire sauce.  Warm over medium flame until heated thoroughly.

Ingredients

  • 1 lb Well-Trimmed Pork Tenderloin or Chicken Breast
  • 1/2 cup Picante Sauce
  • 2 Garlic Cloves, Minced or 1/4 tsp Powdered Garlic
  • 1 tbsp Flour
  • 1 1/4 tsp Ground Cumin
  • 1 tbsp Butter, Margarine, or Oil
  • 1 cup Slivered Onion
  • 1 cup Red Bell Peppers (Cut into Short, Thin Strips)
  • 1 cup Green Peppers (Cut into Short, Thin Strips)
  • 1 packet Dry Sour Cream Mix
  • 1 Tomato (Thinly Sliced)
  • 1/4 tbsp Cilantro for Topping (Optional)
  • 4 large (9 in. dia.) Flour Tortillas

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute.  Cut meat into short, thin strips; set aside.  In a small bowl, combine 1 cup picante sauce, flour and cumin.  Heat oil in a 10-inch nonstick skillet over medium heat.  Add onion and bell peppers.  Simmer and stir 2 minutes.  Add meat and garlic.  Simmer, stirring frequently, 4 to 5 minutes, or until meat is cooked thoroughly.  Stir in 1/4 cup picante sauce and simmer, stirring, 1 minute, or until sauce thickens.  Spoon about down center of each tortilla.  Top with remaining 1/4 picante sauce as desired.  Roll up and eat.

  • 1/2 cup Grated Mozzarella Cheese

  • 8 (9 in. dia.) Flour Tortillas

Instructions

Bring water to a boil.  Sterilize cookware and utensils in the boiling water.  Boil water for another minute and set aside.  Cook sausage, onions, mushrooms...  Oil skillet and place tortilla on the pan.  Add toppings and cheese.  Place second tortilla on top.  Heat for 1 minutes.  Flip and heat 1 minute.  Allow to cool before eating.
